Carrot Soup

This is a Great Winter recipe, I went through 2 weeks of just blended soups. This carrot soup was so great, I decided to share it. I also created carrot and parsnip fries to add to the top.   Serving Size 4   INGREDIENTS 3 tablespoons unsalted butter 2 pounds carrots, preferably with stems, peeled and sliced 1/2-inch thick on the bias 1/4 cup diced onion 1 clove garlic, chopped 1 teaspoon chopped fresh ginger Pinch of sugar Coarse salt and freshly ground pepper 1 tablespoon olive oil 2 parsnips, peeled and sliced crosswise into 1/2-inch rounds 1 teaspoon white-wine vinegar 2 cups homemade or store-bought low-sodium chicken broth 3/4 cup milk 1/4 cup flat-leaf parsley leaves, thinly sliced DIRECTIONS STEP 1 In a medium-size saucepan with a lid, melt butter over medium heat. Lighting Crisis

I just went through an entire year with a badly lit bedroom. Of course it wouldn’t bother you as long as you wake up, jump out of bed, and are gone all day. Only using your bedroom for just that: a place to sleep. Well, initially, this is why I was able to live with my badly lit bedroom for an entire year. But now that I have more time home, something had to be done about this light crisis. Every morning I would be depressed, it never felt like morning, or a get up and get things done day. The day just seemed to be a drag. There was never enough sun! So the change had to be made! We pulled out all of the furniture and reorganized the room. Nothings worst, than a headboard that blocks a window, and dark furniture and paint that absorb light. Although we have a massive mirror on the wall to bounce light; no light was able to get to the mirror to bounce the light around the room....
